Sunflower Seed and Almond Vegetable Sushi

Servings: 3

Ingredients:

Outer Wraps
 3 Sheets of Nori Seaweed
Sunflower & Almond Paste
 ½ cup Sunflower seeds
 ½ cup Almonds
 ½ cup Water
 1 Stick of Celery
 1 Spring Onion
 3 tbsp Raw soy sauce eg. nama shoyu
Vegetables for the middle e.g. strips of courgette, pepper, avocado, mushroom, sprouts or similar

Directions:

Add all of the sunflower and almond paste ingredients to the blender. Blend until it's become a coarse paste.

Divide the paste across the bottom 1/5-1/4 of 3 nori sheets leaving a slight gap at the edge and sides then lay your vegetables on top of the paste.

Roll the sushi - I find that a bamboo rolling mat makes this miles easier!

How to make your own raw vegan sushi

I find sushi easier to cut when it has been sat for a few minutes, so lay it on a flat surface with the loose edge underneath, then after a few mins slice up. These can easily be made in advance and stored in the fridge for later.
