Root Vegetable Roll Up – Raw Vegan Recipe

Servings: 8 Roll Ups

Ingredients:

 2 Medium Carrots
 1 Small Onion
 ½ Beetroot
 ½ cup Cashew Nuts
 1 cup Water
 1 tsp Dried Parsley or a 3-4 fresh sprigs
 ½ Courgette sliced down it's length

Directions:

Blend the parsley, cashew nuts and water in a blender until it becomes a smooth sauce

Chop the carrot, beetroot and onion in a food processor with an s-blade until very finely chopped

Mix the vegetables into the cashew sauce

Slice the courgette into 8 thin slices down it's longest length.

On each slice, spoon the root vegetable mixture on, with more at one end gradually thinning out at the other end.

If you prefer a moist roll up, then roll the courgette from the thick end to the thin end, so the thick end is in the centre. If you would prefer more of a cooked taste then leave it out flat like an open sandwich.

Dehydrate for approximately 4-6 hours depending on your personal preference on 90-105F.
