Raw Vegan Banana Fudge

Overripe bananas are always a treat to work with but somehow we never seem to have enough bananas to last the week to become spotty regardless of how many we buy! When we do though, this raw vegan banana fudge is definitely a favourite all around. It's naturally sweet and deliciously indulgent, so hits the spot perfectly for sugar cravings without the sugar.

Servings: Enough to fill half a baking tray

Ingredients:

 ½ cup Cocoa Butter - Melted
 1 cup Cashew Nuts
 3 Very Ripe Bananas
 1 tsp Vanilla Essence
  cup Warm Water - Or less if you like your fudge harder set

Directions:

Add all ingredients to a high-speed blender. Lower speed blenders may not be able to get as smooth a mix without needing the cashews soaking just prior to adding in (I activate my nuts by soaking them then putting them in the dehydrator).

Blend until smooth then pour into something to set overnight in the fridge. I use a half-sized baking tray lined with a silicone sheet for mine.

Then serve!
