Fermented No-Mayo Coleslaw

Servings: 3 Jam jars

Ingredients:

 ¾ Cabbage
 3 Carrots
 2 Apples
 1 tsp Heaped of Salt

Directions:

Finely slice the cabbage and grate the apples and carrots into a large bowl.

With your hands, crush and squeeze the mix for a good few minutes until the cabbage is looking pretty battered and there is a puddle of juice forming at the bottom.

Place in a tall jar or split between 2 mason jars. Crush the mixture down so the liquid covers the top.

Add a smaller jar filled with a couple of stones to the top to hold the mixture under the water (floating mixture can become mouldy. Don't worry if a tiny bit is still on the surface. It can always be fished out of it goes funny.). Cover it with a piece of cloth held on with an elastic band to keep it breathable without flies getting on it.

Wait! Leave your mixture for 5-7 days out of direct sunlight. You should start seeing bubbles forming and coming up to the top.

Drain off the liquid. Either serve and enjoy or put it in about 4 small jam jars as full as you can to keep as much air out as possible and put in the fridge.
